Srijayanthi or Janmashtami is a significant Hindu festival celebrating the Birthday of Lord Krishna.It is celebrated on the Ashtami Thithi,Rohini Nakshatra during the month of Aavani (within mid-August to mid-September).Vella seedai (seedai made with jaggery) is a yummy mouth watering sweet dish.
Ingredients:
Rice flour - 2 cups
Urad flour - 3 tbsp
Jaggery{powdered} -2 cups
Sesame seeds - 1/4 tsp
Elachi powder - 1 tsp
Grated coconut - 2 tsp
Water - 2 cups
Ghee - 2 to 3 tbsp
Method:
Heat a kadai,roast rice flour lightly (don`t burn it) and let it cool.Similarly roast urad flour lightly and keep it aside.If there are lumbs,blend the flours (separately).Fry sesame seeds in the same kadai and set aside. Powder jaggery, add little water to it and strain it without dirt.Now heat the jaggery with little water and when it becomes thick (when it comes to Pagu consistency), add elachi powder and roasted rice flour while stirring it continuously.When the jaggery mixture becomes semi solid, add roasted urad flour and roasted sesame seeds.Turn off the stove and let it cool.Fry Coconut in a tbsp of ghee and add it to the jaggery mixture.You can even add a tbsp of ghee to this so that the seedai becomes more soft.Now make small amla size balls out of the jaggery mixture.Heat some oil in a kadai on medium flame(the oil should not be too hot).Drop the seedai one by one and fry till golden brown.
